    Brim family style catering is a cultural Middle Eastern custom that comes from the origins of Damascus, Syria where Mike grew up. After a childhood of working in the restaurant industry
    with his father, Mike’s passion grew into a professional career after immigrating to America as a teenager and becoming a culinary student at Kendall College in Chicago as an adult.
     
    We are excited to share this traditional family style of eating and serving each other in an intimate way. We work with each couple and family to create a memorable experience!

    Please note per person pricing does not include an additional 6% sales tax and 15% gratuity of the total wedding balance, and any relevant venue vendor fees. All buffet options include labor, dinner rolls, honey lavender butter, silverware, standard tablecloths for food tables, guest napkin linens, water glasses, and standard china dinner plates.

        Mac + Cheese Pops

        Breaded mac and cheese balls fried and served over our house lemon-garlic chipotle aioli.

        •  Bacon Wrapped Dates
          Soft dates stuffed with goat cheese and wrapped with smoked applewood bacon, drizzled with balsamic glaze.

          Sun-dried tomatoes, kalamata olives, artichokes, olive oil, and fresh mozzarella garnished with Italian herbs.

          Made from scratch spinach and artichoke dip stuffed in phyllo dough, baked to perfection and topped with fresh herbs.
        • Cucumber Sliders
          Sliced cucumber sandwiches filled with traditional homemade hummus, topped with micro greens, and drizzled with extra virgin olive oil.
        • Wisconsin Meat and Cheese Platter
          An assortment of local dried meats and cheeses, paired with seasonal fruits and a jam of your choice made from scratch (raspberry, strawberry, or dates).

          Wild caught shrimp mixed with mango, avocado, lime, cilantro, and a specialty Brim chili seasoning.

          Baked wild caught cod filet mixed with parsley, onion, potatoes, and seasoning, coated with panko crumbs, lightly fried, and served over roasted garlic Dijon.

            Marinated chicken breast and chicken thighs grilled slowly to perfection with our sweet and spicy BBQ sauce.

            Roasted layers of eggplant, tomato, onion, zucchini, green peppers, garlic topped with rustic tomato sauce and Imported parmesan cheese. GF, Vegan, Vegetarian

            Middle Eastern Jaj O Batata

            Marinated organic chicken filets baked with hearts of artichoke and crispy thin slices of potato, topped with a specialty lemon roasted garlic and chili sauce, and served with fresh pita bread. Chef’s favorite!

            Roasted Pork

            Dry rubbed and slowly cooked pork butt with your choice of BBQ or Cajun rub, pulled over oven-roasted baby potatoes.

            Char Brisket

            Char broiled beef brisket in our smokey BBQ sauce, thinly sliced roasted potato, caramelized onion, and baby carrots.

            Chicken Parmesan

            Traditional baked marinara sauce and parmesan cheese.

            Marinated and charbroiled with olive oil, lemon juice and garlic parsley aioli.

            Prime steak carved as guests make their way through the buffet line with au jus sauce and organic herb butter on the side.
